About Pizzaiolo course Level 2: Course Overview Pizzaiolo Level 2 – Advanced Neapolitan Pizza: Dough Control, Biga & High Hydration is an intensive two-day course designed for students who already have a basic understanding of pizza making and want to take their skills to a higher technical level. This course focuses on advanced Neapolitan pizza, with special attention to dough control, professional mixing, temperature management, biga preferment, autolyse, high-hydration dough, advanced stretching techniques, topping balance and baking in both wood-fired and electric ovens. Unlike Pizzaiolo Level 1, which introduces the foundations of pizza making, Level 2 is built as a more technical and practical workshop. The basic concepts from Level 1 will not be repeated. Instead, students will work on more advanced processes and will follow the complete development of the dough from production to baking. During the course, students will prepare doughs on the first day and use them on the second day. This allows them to understand how dough evolves over time and how fermentation, temperature, hydration and preferments affect the final result. The course is limited to a maximum of 8 participants to guarantee more practical work, more individual correction and a better learning experience. Students will work in small groups using professional dough mixers. Who Is This Course For? This section is designed to consolidate the foundations and improve control over a traditional Neapolitan-style product. Contemporary High-Hydration Neapolitan Pizza Students will work on contemporary Neapolitan pizza using higher hydration, biga preferment and autolyse. The focus will be on: dough strength; water absorption; fermentation management; biga management; autolyse management; high-hydration handling; advanced stretching; baking in wood-fired and electric ovens; final texture, structure and crust development. This section helps students understand that high hydration requires more control, not simply more water. Practical Dough Work One of the key elements of the course is direct dough management over two days. Students will prepare doughs on the first day and use them on the second day. This allows them to follow the complete process and observe the real evolution of the dough. The practical dough work includes: preparation of classic Neapolitan dough; preparation of biga preferment; use of autolyse; dough closing with biga and autolyse; use of professional dough mixers; dough temperature control; dough consistency control; resting time management; dividing; dough ball formation; cold fermentation; dough recovery before use; final proofing; evaluation of dough readiness. Oven Practice and Baking The course includes practical baking sessions using both: professional wood-fired oven; professional electric oven.
